### What to do in the next ten minutes

Bake something familiar on a middle shelf and look at where it is pale. Even underbaking with correct timing points at the element or the thermostat; one side pale points at airflow or the door. Shut a paper strip in the door at several points round it and tug it: anywhere it slides out easily, the seal is not sealing.

### Why one reading proves nothing

A probe placed centrally reports what happens nothing else. An oven can hold that number perfectly and still be forty degrees cooler at one corner, which is what produces the complaint. So the cavity is mapped at several positions through a full preheat and hold, and only then is an offset discussed.
