Asko oven bakes unevenly

Everything works and nothing is right. One complaint here carries two unrelated problems behind it, each with its own repair: an oven whose sensor now reads a few degrees out, which is accuracy, and an oven perfectly accurate at its own sensor while being wildly uneven inside, which is airflow or a door seal. No amount of calibration fixes the second, which is why the cavity gets mapped with a probe at several positions rather than read once in the middle.

Three ordinary causes

What this usually turns out to be

Cheapest and commonest first, which is also the order we check them in. They sit hundreds of dollars apart, and only the unit settles which one is yours.

  • The door seal has taken a set

    Heat leaving at one corner shows as an oven that browns on one side, and the gasket is an ordinary part. It is the most common cause of uneven baking on any oven.

  • The convection fan has slowed

    A fan turning slowly moves air unevenly rather than not at all, so the oven works and the results drift. Measured under load rather than judged by sound.

  • The sensor has drifted

    Accuracy rather than evenness. Where the map shows the cavity is even but consistently cool or hot, an offset is the answer and it is set where the platform allows.

    Is it uneven or just wrong?

    Even underbaking is accuracy. One side pale is evenness. The two lead to different parts and the difference is visible on a single tray of biscuits.

    Paper closed at intervals, cold. It costs nothing and it settles the commonest cause.

    Has anything changed in the kitchen?

    A new rack position, a different tray, or a machine that has been moved. All three produce this and none is a repair.

What to do in the next ten minutes

Bake something familiar on a middle shelf and look at where it is pale. Even underbaking with correct timing points at the element or the thermostat; one side pale points at airflow or the door. Shut a paper strip in the door at several points round it and tug it: anywhere it slides out easily, the seal is not sealing.

Why one reading proves nothing

A probe placed centrally reports what happens nothing else. An oven can hold that number perfectly and still be forty degrees cooler at one corner, which is what produces the complaint. So the cavity is mapped at several positions through a full preheat and hold, and only then is an offset discussed.

What a European oven in an American kitchen adds

Rack positions, tray sizes and the habits that go with them are all slightly different, and a machine that bakes correctly can still disappoint somebody using it the way they used the last one. We say so where that is what the map shows, rather than adjusting an oven that is right.

Should I just set an offset?

Only once the map shows the cavity is even. An offset applied to an uneven oven moves the whole problem rather than solving any of it.

Is it worth replacing the seal on an old oven?

Usually — it is inexpensive, it is the commonest cause here, and it also stops heat going into the cabinetry around a built-in oven, which matters in a tall run.
